Meatloaf

Ingredients:

3 lbs ground chuck
3 eggs
1 1/2 cups Italian breadcrumbs
1/3 cup milk
1 medium onion, finely diced 
salt 
pepper
2 slices of cooked bacon diced (optional) 

Optional sauce:
Equal parts Ketchup and Open Pit original BBQ sauce
 Brown Sugar

This amount of ingredients fits perfectly in a 9X13" baking pan. 

Put all of the ingredients in a bowl and mix together with your hands. 

 Press in a 9X13" pan and place in a preheated 375 degree oven. Bake for about 45 minutes. After the 45 minutes of cooking, dump the grease out of the pan into a bowl to discard later. 

Meanwhile, mix together about 1/3 cup ketchup and 1/3 cup Open Bit barbecue sauce and about 1 tablespoon of brown sugar for this amount of sauce. 


My whole family doesn't like the sauce, so I only spread it on half of the meatloaf. Place it back in the oven for about 15 minutes, or until the meatloaf is cooked all the way through.  A great side with meatloaf is baked potatoes, and the best part is they take about the same amount of time in the oven.
