General Tso Chicken

We made this for our Hamilton Party--"Here Comes the General" Tso Chicken. It was so good!
Ingredients:
1-1 1/2 lbs chicken breast cut into cubes
2 eggs beaten
salt and pepper
1/2 cup flour
1/2 cup cornstarch
canola oil for frying

Sauce
2 tsp canola oil
2 tsp minced garlic
1/2 tsp red pepper flakes
3/4 cup chicken broth
2 Tbsp hoisin sauce
2 Tbsp brown sugar
1/4 cup soy sauce
1 Tbsp corn starch

Scramble the eggs in a bowl. Mix the flour, cornstarch, and salt and pepper in a separate bowl. Dip the chicken cubes into the egg and then into the flour/cornstarch mixture. Fry the chicken in 350 degree oil for about 2 minutes, or until the internal temperature is 165 degrees.

While the chicken is cooking, make the sauce. Heat the 2 tsp canola oil and garlic and red pepper flakes in a saucepan for about 30 seconds. In a measuring cup, combine the chicken broth, hoisin sauce, brown sugar, soy sauce, and cornstarch. Whisk that together. Add to the saucepan and whisk until the sauce thickens. You can mix the cooked chicken immediately with the sauce, or dip the chicken pieces if you prefer the sauce on the side. I topped ours with sesame seeds as well.
