While looking for an easy treat for my son to take to his class for Valentine's Day, I came across these: http://realmomkitchen.com/251/sugar-cookie-bars/.
They took 30 minutes start to finish and the kids loved them! (So much better and easier than roll out sugar cookies!)
Ingredients:
1 cup butter, softened
2 cups sugar
4 eggs
2 tsp vanilla
5 cups flour
1 tsp salt
1/2 tsp baking soda
Cream the butter and sugar together. Add the eggs, one at a time, mixing well after each addition. Add the vanilla.
In a separate bowl, mix the flour, salt, and baking soda. Add the dry ingredients to the wet ingredients and mix until just combined.
Pour the dough in a greased sheet cake pan. Bake at 375 for 10 minutes. (Make sure you don't over-bake.)
Frosting ingredients:
1/2 cup butter, softened
1/2 cup Crisco shortening
1 tsp vanilla
pinch of salt
4 cups powdered sugar
5 Tbsp milk
Whip the butter and Crisco together. Add the vanilla and salt. Add the powdered sugar 2 cups at a time. Then add the milk and whip until fluffy. Add food coloring of your choice.
Spread the frosting on the cool cookie and add sprinkles of your choice.
Cut into bars and serve.
