Ingredients:
1 1/2 cups apple cider
2 cups flour
1 tsp baking soda
3/4 tsp baking powder
1 tsp cinnamon
1 tsp apple or pumpkin pie spice
1/4 tsp salt
2 Tbsp butter
1 egg
1/2 cup brown sugar
1/2 cup sugar
1/2 cup milk
1 tsp vanilla
Topping:
3/4 cup sugar
3/4 tsp cinnamon
1/2 tsp apple or pumpkin pie spice
6 Tbsp melted butter
Put the apple cider in a small saucepan and simmer until it is reduced to about 1/2 cup. It takes about 15 minutes. Let it cool for about 10 minutes. Meanwhile, Mix the flour, baking soda, baking powder, cinnamon, spices, and salt together with a whisk. In a separate bowl, whisk the butter, egg, brown sugar, white sugar, milk, and vanilla.
Add the dry ingredients and the reduced apple cider to the wet ingredients. Whisk until just combined.
Spray a donut pan with cooking spray. I put the dough in a plastic bag and cut off the tip. Then I piped the dough into the pan.
Bake in a preheated 350 degree oven for about 10 minutes.
Let cool on a wire rack. When cool enough to touch, dip in melted butter and coat with cinnamon and sugar mixture.
