Gingerbread Men (or Reindeer) Cookies

Ingredients:
2 1/2 cups flour
1 1/2 teaspoons cinnamon
2 tsp ginger
1/2 teaspoon allspice
1/2 teaspoon nutmeg
1/2 teaspoon salt
1/2 teaspoon baking soda
1/2 cup butter, melted
1 egg
3/4 cup brown sugar
1/3 cup molasses

Start by placing all the dry ingredients in a bowl. Stir. 

In a mixing bowl, cream the butter and brown sugar. Add the egg. Then stir in the molasses. Make a well in the dry ingredients. Using a wooden spoon, stir the wet ingredients in the dry ingredients. 

Knead with your hands until well incorporated. Divide the dough into four pieces. Press each piece down a little bit and place plastic wrap between each piece of dough. Place in the refrigerator for about an hour. 
Roll each piece of dough on a lightly floured surface. Cut out with a gingerbread cookie cutter. Place on a baking pan. Cook for 7-10 minutes at 350 degrees. 

Let cool on wax paper. 


These can be turned into gingerbread men or reindeer. I used mini chocolate chips for the eyes. The reindeer have cinnamon candies for a nose.
