Grinch Cookies

For our family movie night, we decided to make Grinch cookies. I adapted the recipe from this website: http://www.sixsistersstuff.com/2012/11/andes-mint-grinch-cookies.html

Ingredients:
2 3/4 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon baking powder
1 cup butter
1 1/2 cup sugar
1 egg
1 teaspoon peppermint extract
20 drops green food coloring
1 cup mint chocolate chips
1/4 cup white chocolate melting disks. 

Preheat oven to 375 degrees. 
Mix flour, baking soda, salt, and baking powder in a bowl. 

Using a stand mixer, cream the butter and sugar until fluffy. Add the egg and peppermint extract. 

Slowly add the dry ingredients. Add the food coloring. Mix until color is incorporated.

Fold in the chocolate chips.


Place the dough in the refrigerator for about 30 minutes. When chilled, place rounded teaspoons of batter on an ungreased baking sheet. Press the dough down to form a rounded shape.

Bake for about 8 minutes. After baking, let the cookies sit on the baking pan for about 2 minutes. Then remove to a wire rack.


Melt the white chocolate in the microwave in 30 second intervals, stirring after each 30 seconds, until fully melted. Drizzle chocolate over the cookies.
