Easy French Toast

My kids love French toast. I tried to come up with a quick recipe with ingredients that I always have on hand.

2 eggs
3 pieces of bread
1/8 cup of vanilla coffee creamer
1-2 teaspoons cinnamon
Start by cracking your eggs in a wide bowl. Add the creamer and cinnamon. If you don't have creamer, use milk and a dash of vanilla extract.
Scramble the ingredients together with a fork. Then soak both sides of the bread in the mixture. I always use 100% whole wheat bread and it turns out fine.

Heat a skillet and spray with cooking spray. Place the bread on the pan and flip after about a minute of cooking. Cook for another minute on the other side. Your finished toast should look like the piece on the left in the picture below.
Serve with syrup.

The kids not only like this for breakfast, but for dinner too!
