My family loves breakfast for dinner. I love it too, because it is a quick dinner and no one complains!
Here is my pancake recipe:
1 1/3 cup flour
1 1/4 cup milk
2 Tablespoons sugar
1 Tablespoon baking powder
3/4 teaspoon salt
2 teaspoons softened butter (optional)
Whisk ingredients until just just mixed--don't over beat or they will become heavy.
We add mini chocolate chips or blueberries. When I get really crafty, I pour them out to make the shape of a pawprint or Mickey Mouse.
