Banana Mocha Cake

My mom found this recipe in a Penzeys Spices magazine and shared it with me. 

3 ripe bananas
1 1/2 cups brown sugar
1 1/2 cups strong brewed coffee, cooled
1 cup oil
1 tsp. vanilla
2 Tbsp. apple cider vinegar
1 tsp. cinnamon
1 tsp. salt
2 3/4 cups flour
2 tsp. baking soda
1 cup chocolate chips

Mash the bananas and mix in the brown sugar. Add the coffee, oil ,vanilla, apple cider vinegar, cinnamon and salt. Mix in the flour and baking soda. Pour in a 9x13 inch cake pan. 
Top the cake batter with the chocolate chips. Bake at 350 degrees for 30 minutes, or until golden brown and a toothpick comes out clean. 

Slice and serve.
