I altered this recipe I found on Pinterest called Amish Cinnamon Bread. (http://www.redflycreations.com/2012/10/the-amazing-amish-cinnamon-bread.html)
Ingredients:
1 cup butter, softened
1 1/2 cups sugar
2 eggs
2 cups buttermilk (or 2 cups of milk with 2 Tablespoons vinegar added to it)
4 1/4 cups flour
2 teaspoons baking soda
Cinnamon/Sugar Mixture:
2 teaspoons cinnamon
2/3 cup sugar
Start by creaming the butter and sugar. Add the eggs.
Then, alternate additions of the milk, flour, and baking soda, mixing constantly.
Grease two loaf pans. Add 1/4 of the batter to each of the loaf pans. Top each loaf pan with 1/4 of the cinnamon/sugar mixture. Then divide the rest of the batter between the two loaf pans.
Spread out the batter. Top each loaf with equal amounts of the cinnamon/sugar mixture. (I didn't end up using the full amount. I had about a Tablespoon left)
Using a knife, swirl the cinnamon/sugar mixture into the top of the batter.
Bake at 350 degrees for about 50 minutes. Let it sit in the pan for about 20-30 minutes before removing and cutting.
